Tasty Tuesday: Fair Trade Apple Galette

It's apple picking time!

Last weekend my son and I along with some friends went to Julian, CA to pick apples.  Julian is a quaint town just outside of San Diego; its history dates back to the California Gold Rush of the 1840s.

My son and his friend, both toddlers, enjoyed picking and eating a ton of apples while at the orchard.  And then we had apple pie at Julian Apple Pie Company too.  It seemed they couldn't get too many apples that day!

Upon returning home I knew I needed to make use of these apples before they went bad.  I decided on a fair trade apple galette for practical reasons: it is tasty and easy.

When I returned to Ohio this summer to visit family and friends a friend of mine made a mixed berry galette; it was so good and she explained that it was also so easy.

The fair trade apple galette that I made was simple a baker of any skill level could make it.  And to make it even easier I used puff pastry instead of making my own dough.  I did make my own whipped cream too (recipe included), which is also remarkably easy.

Fair Trade Apple Galette: From All Recipes
Prep Time 15 Minutes
Ready in 1 Hour 5 Minutes
1 sheet puff pastry, rolled to 1/8-inch
4 baking apples - peeled, cored, and cut
into 1/3-inch thick slices
1 tablespoon freshly squeezed lemon
1/3 cup superfine Fair Trade sugar
2 tablespoons cornstarch
1 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
1/8 teaspoon ground cloves
1 egg, well beaten

Preheat oven to 400 degrees F (200 degrees C).

Lay puff pastry onto a round pizza pan or cookie sheet.

Mix apples and lemon juice together in a bowl until evenly coated; add sugar, cornstarch, cinnamon, nutmeg, and cloves. Toss to evenly coat apples. Spread apple mixture into the center of the puff pastry and fold edges of pastry toward the center. Brush the folded pastry edges with about 1/2 the egg.

Refrigerate pastry-apple mixture for flavors and pastry to settle, about 10 minutes. Brush pastry with remaining 1/2 egg.

Place pan on the top rack of preheated oven and bake for 20 minutes. Give galette a 1/4 turn and lower heat to 350 degrees F (175 degrees C). Continue baking until pastry is lightly browned, 8 to 10 minutes. Cool slightly before serving, about 10 minutes.
